guys and girls of The Womens, I need help with a gift idea

Please help me think up a great gift/celebration idea for my husband, who is finally at the end of 7+ years of grad school (now THAT's an endurance event!).
For some background, we live in Austin, are in our early thirties, and have been married for five years. He's an engineer, which doesn't exactly lend itself to great gift ideas. He has been so busy this summer that he's pretty much stopped training but is looking forward to getting back into it (especially swimming). He loves to travel, but we'll probably have no more than a long weekend to go anywhere if I go the "celebratory getaway" route, and the options within reasonable driving distance of here are limited. While his actual graduation is in December, he's going to defend his dissertation around October, and I'd really like to be able to whip out/announce some big surprise the day he defends.
Any ideas? I'd really appreciate it.

Okay, I'm sure my suggestion won't get any backing, but if he's into sports get him a gift certificate to a bike/tri/run shop. No one will like this either - for me, cash is ALWAYS the best gift. It doesn't matter what what the celebration is for or who gives it - cash is always king!

I recommend a celebratory weekend getaway to the hillcountry and take your bikes. I too have a husband who is an engineer and struggle with gift ideas. His 50th B-day is coming up. I am planning a trip to Fredericksburg and will be staying at Trois Estates near enchanted rock. I have never been there but have been told it is very nice. Check out the website: Troisestate.net. It is pricey ($150-200) but should be memorable and worth it. I think weekday rates are more affordable. I hope you guyes have a wonderful time.

That looks great! And there's a spa, too, which I know he'll like. Thank you!
I'm really hoping to heap the "celebration" on him, so any other ideas are welcome, too!
